Steamed Eggs

I'm probably about the last person to discover this, but just in case one of you hasn't heard of this yet, steamed eggs! If you've ever tried to boil fresh eggs, you know what a pain it is to peel one. It takes hours of painstaking effort only to be left a pretty much the yolk and few sad remnants of white.

 I'd been told that steaming them took care of all that. So, I tried it. The first time I followed directions and kept the water boiling for 15 minutes after I saw steam coming from the lid. That was an epic fail. Of course, I had attempted this with my kids' Easter Eggs. Cooked 'em, dyed 'em, hid 'em. Then they cracked on open. Ugh! Half cooked, oozy yolk. We weren't impressed as we like our hard-boiled eggs to actually be hard boiled. I had to boil up another batch for the kids to dye and eat.

Talking to someone, they said maybe I should try cooking them longer since I'm at a higher altitude. Duh. I felt intelligent but I did it anyway. What's shame compared to beautifully peeled, hard cooked eggs? This time I cooked them for 25 minutes after seeing steam. I then cooled them in cold water and tried one. Perfection! The shell came off in two pieces and the egg was cooked completely. While I still get the occasional egg that is a bit harder to peel, it's not as bad as boiled and 9 out of 10 are easy as pie.

 Put the eggs into a steamer basket in a pot. Fill with water to the bottom of the steamer basket. Put on high heat til you see steam escaping from the pot. Then cook 15 minutes. Cool. Adjust time if needed. I cook them for 25 minutes and I'm at 3900'.

I'm slow, but I get there! :)
