A perfect day for a pot of chili, yum!

It's a cold, blustery day outside. Perfect for a pot of chili!



Homemade bone broth from home grown cows, with beef from said cows, homegrown onions and garlic, a little mexican oregano, paprika, cumin, a little smoked paprika and some beans.



 The base of the whole dish, though, is these ancho peppers. Brought just to a boil, soaked for a bit and the run through the blender and added to the pot, mmmmmmmmmmmmm. I'd throw in some jalapeno or something as well if I had any.



Let it simmer for a few hours til everything is nice and tender and then salt to taste. Sometimes I throw in some lemon or lime juice or a can of beer, just depends on what I have available.

Serve over hot, homemade cornbread with a little bit of sour cream and some olives, maybe some of my fermented peppers, good stuff!
